  1. 3 Russet potatoes - each cut 8 - lengthwise 1 Onion - , thinly sliced

  2. 2 tablespoons 30ml Olive oil

  3. 1 tablespoon 15ml Chopped fresh parsley

  4. 1/2 teaspoon 2 1/2ml Garlic powder

  5. 1/2 teaspoon 2 1/2ml Salt

  6. 1/2 teaspoon 2 1/2ml Coarsely ground pepper

  7. 1 cup 146g / 5.1oz Shredded cheddar cheese or Colby-jack cheese

  1. In large bowl combine potato wedges, onion, oil, parsley, garlic powder, salt and pepper. Place in a foil grill pan in single layer. Cover with second foil pan to form packet.

  2. Reinforce sealed edge of packet with foil. Place on grill over medium heat; cook 40 to 50 minutes or until tender, shaking the packet periodically and turning upside down halfway through grilling.

  3. Remove cover; top with cheese. Cover, cook 3 to 4 minutes more until cheese melts.

  4. Note: To make grill pan packet, invert one grill pan over filled grill pan, overlapping slightly.

  5. Fold top of one short end down to seal; fold bottom of other end to seal.
