  1. 1 large eggplant

  2. 1 egg white

  3. 3 Tb cornstarch

  4. 2 tsp salt

  5. 1 Tb Chinese five spice

  6. oil for deep frying

  1. Slice the eggplant. Place egg white in a bowl and beat until foamy and light. Mix cornstarch, spice, & salt on a large plate. Heat oil for deep-frying. Dip each slice in egg & then in powder mixture. Deep fry in batches for 4-5 minutes, or until golden brown and crispy.
