  1. 3/4 cup white rice

  2. 2 cups LACTAID® Low Fat Milk

  3. 1 cinnamon stick

  4. 1 1/2 cups good quality semisweet or bittersweet chocolate chips

  5. 1/2 cup sugar

  6. 1/4 teaspoon salt

  7. 1/2 teaspoon vanilla extract

  1. Cook rice following package directions. Set aside.

  2. Heat LACTAID® Low Fat Milk, and cinnamon stick in a medium saucepan over medium-low heat until beginning to simmer. Stir frequently. Remove cinnamon stick and add chocolate. Cook over low heat, stirring frequently until melted and well blended. Simmer over low heat 1-2 minutes.

  3. Add sugar, salt, vanilla and cooked rice. Cook over low heat 2-3 minutes or until sugar is melted and rice is hot. Stir constantly.

  4. Pour into heat resistant dish, cover and refrigerate 2-3 hours or until cool.
