  1. 1/4 c. butter, softened

  2. 1/2 c. packed brown sugar

  3. 1 c. mashed cooked sweet potato

  4. 3 eggs, lightly beaten

  5. 1/3 c. corn syrup

  6. 1/3 c. milk

  7. 1/2 tsp. salt

  8. 1 tsp. vanilla extract

  9. 1 unbaked pie shell

  1. Preheat oven to 425 degrees. Cream butter and brown sugar in bowl until light and fluffy. Blend in sweet potato and eggs. Add next 4 ingredients; mix well. Pour into 9-inch pie shell. Bake for 10 minutes. Reduce temperature to 325 degrees. Bake for 35-45 minutes or until set. Yield: 6 servings.
