  4. 1 1/2 tsp. ginger

  5. 1 tsp. cinnamon

  6. 1 tsp. nutmeg

  8. 4 tbsp. butter

  9. 1/4 cup molasses

  10. 2 eggs

  11. 1 cup milk

  12. 1 tsp. vanilla extract

  13. 2 tsp. orange zest

  14. 1 1/2 cups fresh cranberries

  1. Preheat oven to 350 degrees and grease a 9- x 5-inch loaf pan. Mix the flour, sugar, baking powder, ginger, cinnamon, nutmeg, and salt in a large bowl. Melt the butter in a saucepan. Stir in the molasses and let cool. In a separate bowl, beat together the eggs, milk, and vanilla extract and add to the molasses mixture. Make a well in the center of the dry ingredients and pour in the liquid mixture. Blend until just mixed. Fold in the grated orange zest and the berries. Bake in the loaf pan for 40 to 50 minutes, or until a knife inserted in the center comes out clean. Once cool, top with citrus glaze: combine 2 tablespoons orange juice, 3 tablespoons sugar, and 1 tablespoon butter in a small saucepan and cook over low heat. Prick the top of the bread using a fork and drizzle on the glaze.
