  6. 1 t Dried yeast

  7. 1 1/2 c Warm water

  8. 2 tb Olive oil

  9. 1 1/2 ts Salt

  10. 4 c Unbleached all-purpose flour

  11. Stir the yeast into the water in a large bowl & let

  12. proof for 10 minutes. Stir in the olive oil. Whisk in

  13. the salt & add flour a cup at a time. Knead until soft

  14. & velvety, about 10 minutes. Cover & let rise until

  15. doubled. Punch dough down & divide it in half. Roll

  16. halves into balls & let them rise under moist cloths

  17. 20 to 30 minutes. Use in the following recipes.

  18. VARIATIONS: For Neapolitan Pizza, omit the oil.

  19. If you are at work all day, reduce the amount of yeast

  20. & let rise slowly for 8 hours or so. Ensure it is

  21. 3/4 c wholewheat flour with
