  2. Frozen Nectarine Yogurt

  7. 5 California nectarine -- chopped

  8. 1 cup water

  9. 1/4 cup honey

  10. 1 tablespoon lemon juice

  11. 1 teaspoon vanilla

  12. 1/4 cup apple juice

  13. 1 cup plain lowfat yogurt

  14. Combine nectarines, water and honey in saucepan; cook over medium-high heat

  15. until nectarines are soft. Remove from heat. Puree in blender or food

  16. processor. Stir in lemon juice, vanilla and apple juice. Chill until cool.

  17. Whisk yogurt into nectarine mixture. Pour into an 8 X 8-inch pan and freeze

  18. until crystals form around edges, about 45 minutes. Stir crystals into middle

  19. of pan and return to freezer. When lightly frozen through, whip mixture until

  20. light in color. Spoon into storage container and freeze until firm. Let

  21. soften at room temperature 10 minutes before serving. - - - - - - - - - - - - - - - - - -

  22. NOTES : A summer time alternative to store bought frozen yogurt.
