  5. 1 tb Oyster sauce

  6. 2 ts Ketchup

  7. 1 pn Of white pepper

  8. 2 1/2 oz Chicken broth

  9. 1 1/2 ts Dark soy

  10. 2 1/4 ts Sugar

  11. 2 1/4 ts Cornstarch

  12. 3/4 c Char Siu

  13. 1 tb Peanut oil

  14. 1/2 c Diced onion

  15. 1 1/2 ts White wine

  16. Combine in a bowl: Heat wok for 30 - 40 seconds. Add

  17. peanut oil & heat until white smoke rises. Add onion

  18. and cook over low heat until onions turn light brown.

  19. Add char siu, increase heat, stir fry until mixture

  20. well combined. Add wine and mix well. Reduce heat and add sauce mix from bowl. Stir until thickend. Add

  21. 1/2 tsp. sesame oil and mix well. Remove mixture to

  22. shallow dish. Allow to cool to room temp then

  23. refrigerate uncovered for 4 hrs.

  24. 1 recipe Steamed Bun Dough into a

  25. 16 inch long

  26. roll and cut into 16 1 pieces. Roll each into a ball

  27. and cover with damp cloth. Work dough ball into a

  28. hemisphere. Put 2 Tbs. filling mix into formed

  29. hemisphere in palm of one hand. Work around the

  30. hemisphere, pleating and closing the dough until

  31. filling is completely covered.

  32. 2 1/2 X 2 1/2 squares of wax paper. Place in steamer at least

  33. 2 apart, steam for 15 - 20 minutes. Serve immediately. --
