  2. 1 tablespoon 15ml Vegetable oil

  3. 1/2 cup 31g / 1.1oz Chopped onion

  4. 1 -- mild green chilies

  5. 1 teaspoon 5ml Minced garlic

  6. 1 teaspoon 5ml Ground cumin

  7. 1 teaspoon 5ml Oregano leaves - crushed

  8. 1 teaspoon 5ml Sugar

  9. 1/8 teaspoon 0.6ml Ground cloves

  10. 1/8 teaspoon 0.6ml Ground red pepper

  11. 1 -- chicken broth

  12. 1 Ca - white kidney beans Rinsed and drained

  13. 2 cups 125g / 4.4oz Cooked - cubed chicken

  1. Recipe Instructions Core and coarsely chop tomatoes (makes about 4 cups); set aside. In a large saucepan, heat oil until hot. Add onion. Cook, stirring occasionally, until tender, about 5 minutes. Stir in chilies, garlic, cumin, oregano, sugar, cloves, red pepper and the 4 cups reserved tomatoes. Reduce heat and simmer, stirring occasionally, until the tomatoes are softened, about 5 minutes. Add chicken broth; bring to a boil, reduce heat, simmer, covered, to blend flavors, about 15 minutes. Add beans and chicken; cook until hot, about 5 minutes. Garnish with sour cream, shredded Cheddar cheese, diced tomatoes, and chopped cilantro, if desired.
