  2. 2 pounds dry kidney beans

  3. 1 large onion

  4. 1/2 cup chopped celery

  5. 1 chopped garlic clove, optional

  6. 2 bay leaves

  7. 1/2 teaspoon fresh thyme, or dried

  8. Seasoned salt, to taste

  9. 2 smoked turkey legs, cut in pieces

  10. Prudholm poultry or meat or soup magic

  11. Hot sauce, to taste

  1. Wash and soak the beans overnight. In the morning, rinse and discard the water.

  2. Place the onion, celery, garlic, turkey legs and bay leaves and thyme on the bottom of the crockpot.

  3. Pour beans on top. Add water to cover to top of crockpot. Shake in hot sauce.

  4. Cook on high for 1 hour and reduce to low for 7-8 hours.

  5. When beans are done remove approximately 1 cup and mash to a paste.

  6. Add the paste back to the pot and stir.

  7. Turn the pot off and let stand for about 1 hour.

  8. Serve over rice with smoked sausage and hot sauce.
