  2. ORIENTAL MEATBALL SALAD

  6. 1/2 c Milk

  7. 2 Eggs

  8. 3 c Soft bread crumbs

  9. 1 t Onion salt

  10. 1 lb Ground beef

  11. 2 ts Peanut oil

  12. 8 1/4 oz Pineapple chunks

  13. 2 Green peppers, cut 1/2 sqs.

  14. 2 Carrots, sliced

  15. 2 Stalks celery, sliced

  16. 1/2 c Brown sugar, packed

  17. 2 tb Corn starch

  18. 1/2 c Dry white wine

  19. 1/2 c Vinegar

  20. 2 tb Soy sauce

  21. 2 Tomatoes, wedged

  22. Shredded lettuce

  23. Combine eggs and milk, stir in bread crumbs, onion salt and 1/8 tsp.

  24. pepper. Add ground beef and mix well. Shape mixture into 3/4 meatballs.

  25. In skillet, cook meatballs in peanut oil about ten minutes or until done,

  26. turning frequently. Drain the meatballs.Drain pineapple, reserving juice.

  27. Add water to reserved juice to make 3/4 cup liquid. Combine pineapple

  28. chunks, green pepper, carrot, celery and meatballs; set aside. In a small

  29. saucepan combine brown sugar and cornstarch; stir in the 3/4 cup pineapple

  30. liquid, wine, vinegar and soy sauce. Cook and stir until thickened and bubbly. Pour hot mixture over meatball mixture. Cover and chill. To serve,

  31. carefully stir tomatoe wedges into meatball mixture or reserve tomatoe

  32. wedges and arrage along edges of plates. Place shredded lettuce on

  33. individual plates; spoon meatball mixture on top.
