  2. OLIVE-TAHINI SAUCE

  6. 2 tb Unbleached white flour

  7. 1 c Water

  8. 1/4 c Liquid from canned black

  9. -- olives

  10. 1/3 c Tahini

  11. 1 c Finely chopped black olives

  12. Juice of 1 lemon

  13. 1/4 ts Thyme

  14. Black pepper

  15. Dissolve flour with just enough water to make a

  16. smooth, flowing paste. Set aside. Heat water & olive

  17. liquid till just under boiling point. Whisk in tahini,

  18. a littel at a time, then the flour paste. Simmer

  19. overl ow heat til the sauce is thick. Stir in the

  20. remaining ingredients & serve immediately.
