  1. 1 to 2 lb baking potato es, scrubbed

  2. 8 oz shredded cheddar cheese

  3. a few slices bacon

  4. Extra virgin olive oil

  5. Salt and pepper to taste

  1. Preheat oven to 375°.

  2. Peirce potatoes with a fork on all sides. Place on sheet pan lined with foil and drizzle with extra virgin olive oil. Lightly season with salt and pepper. Bake for an hour.

  3. Meanwhile, finely chop the bacon and cook in a skillet. Set aside on a few paper towels.

  4. Allow potatoes to cool enough to handle. Cut baked potatoes in half. Top with cheese and bacon. Bake for about ten more minutes just to melt the cheese.

  5. Serve with sour cream and shredded lettuce.
