  1. 12 vanilla wafer cookies

  2. 448 g cream cheese, softened

  3. 1/2 cup sugar

  4. 1 tsp. vanilla extract

  5. 2 large eggs

  1. Preheat oven to 325 degrees. Line a 12 cup muffin tin with foil cupcake liners. Place one cookie in the bottom of each liner. Beat together cream cheese, vanilla and sugar on medium speed until well mixed. Add eggs 1 at a time. Mix well. Pour over wafers, filling liners 3/4 full. Bake 25 minutes. Cool at room temperature. Remove from pan and refrigerate 4 hours. Top with fruit, preserves, nuts, candy, etc.
