  1. 1/2 c Sugar

  2. 1/2 ts Salt

  3. 1 1/2 ts Baking powder

  4. 1 tb Sugar

  5. 1 c All-purpose flour*

  6. 3 tb Shortening

  7. 1 ts Lemon juice

  8. 4 c Sliced peaches (about 6)

  9. 1/4 ts Ground cinnamon

  10. 1 tb Cornstarch

  11. 1/2 c Milk

  1. *if using self-rising flour omit Baking powder and salt.

  2. Heat oven to 400 degrees.

  3. Mix 1/2 cup sugar, the cornstarch and cinnamon in 2-quart saucepan.

  4. Stir in peaches and lemon juice.

  5. Cook, stirring constantly, until mixture thickens and boils.

  6. Boil and stir 1 minute.

  7. Pour into ungreased 2-quart casserole; keep peach mixture hot in oven.

  8. Cut shortening into flour, 1 tablespoon sugar, the baking powder and salt until mixture resembles fine crumbs.

  9. Stir in milk.

  10. Drop dough by 6 spoonfuls onto hot peach mixture.

  11. Bake 25 to 30 minutes or until topping is golden brown.

  12. Serve warm and, if desired, with Sweetened Whipped Cream.
