  2. 1 1/2 cups flour

  3. 1 teaspoon baking powder

  4. 1 teaspoon baking soda

  5. 1/2 teaspoon salt

  6. 1/2 teaspoon cinnamon

  7. 1/4 teaspoon nutmeg

  8. 1/4 teaspoon ginger

  9. 1/8 teaspoon allspice

  10. 3/4 cup sugar

  11. 1 egg

  12. 1/2 cup buttermilk

  13. 1/4 cup vegetable oil

  14. 1/2 teaspoon vanilla

  15. 1 - 14 ounce can crushed pineapple, drained

  16. 3/4 cup carrots, finely grated

  17. 1/2 cup raisins

  1. Directions :

  2. Preheat oven to 400°F.

  3. Lightly oil or spray 12 muffin cups or line with paper cups.

  4. Stir flour together with baking powder, baking soda, salt, spices and sugar in a large mixing bowl. Whisk egg in a medium sized bowl with buttermilk, oil and vanilla. Stir in pineapple.

  5. Pour into flour mixture and stir until just combined. Stir in carrots and raisins. Spoon batter into muffin cups. Bake 15-17 minutes or until a toothpick comes out clean.

  6. Yield: 12 muffins
