  2. Title: SHERRIED PORTOBELLO MUSHROOM GRAVY

  5. Pan of drippings from roast

  6. -turkey breast

  7. 3/4 c Dry sherry

  8. 1 Portobello mushroom, cut -into 1/2-inch cubes

  9. 1 1/2 c Water; up to

  10. 3 tb Cornstarch mixed with

  11. 3 tb Water

  12. Salt and pepper

  13. Remove the turkey breast from the roasting pan; set aside.

  14. Place the pan and its drippings over medium-low heat. Stir in the

  15. sherry, scraping and deglazing the pan. Add the mushroom pieces,

  16. continuing to stir. As the sauce thickens, add the water, a little at

  17. a time, continuing to stir for 3 or 4 minutes. Stir in the

  18. cornstarch-water mixture, increase the heat to medium and stir until

  19. the gravy thickens. Taste and adjust seasoning with salt and pepper,

  20. if necessary.

  21. Yields 3 cups.
