  1. 1 cup 237ml Evaporated milk or heavy cream

  2. 1 cup 198g / 7oz Sugar

  3. 3 Egg yolks - slightly beaten

  4. 1/2 cup 99g / 3 1/2oz Butter or margarine

  5. 1 teaspoon 5ml Vanilla

  6. 1 1/3 cups 123g / 4 1/3oz Coconut - shredded

  7. 1 cup 146g / 5.1oz Pecans - chopped

  1. Recipe Instructions Combine milk, sugar, egg yolks, butter and vanilla in a saucepan. Cook over medium heat, stirring constantly until mixture thickens, about 12 minutes. Remove from heat. Add coconut and pecans. Cool until of spreading consistency, beating occasionally. Makes 2 1/2 cups or enough to cover the tops of 3 9-inch layers. For thinner frosting, use only 2 egg yolks.
