  1. 1 onion (2 c sliced)

  2. 1/4 c butter

  3. 1-2 potato es (2 c sliced)

  4. 3-4 tomato es (5 c sliced)

  5. 2 tsp sugar

  6. 1 tsp salt

  7. tsp paprika

  8. 1 c cream

  1. Prepare and cook the soup Slice onions and saute in butter very gently until translucent. Peel and slice potatoes, and bring to a boil in 6 c water. Once boiling, add onions and simmer 30 minutes.

  2. Slice tomatoes and add to pot with sugar, salt, and paprika. Simmer covered for 20 minutes.

  3. Blend soup and serve Very, very carefully, ladle soup into blender, no more than ½ or ⅔ full. Keep enough room in the blender for the hot air to escape. Using potholders, hold lid of blender down and puree soup. Pour the blended soup into a large bowl.

  4. Clean pot, and pour in contents of bowl. Reheat soup, season to taste. Scald cream (or milk) and stir into tomato soup. Serve at once.
