  1. Menudo

  2. 5 lbs. menudo (tripe)

  3. 8 cup water

  4. 3 Tbsp. oil

  5. 2 Tbsp. flour

  6. 2 Tbsp. chili powder

  7. 1 cup water

  8. 1/2 tsp. garlic powder

  9. 1/2 tsp. comino

  10. 1 1/2 tsp. oregano

  11. 1 Tbsp. salt

  12. 1 (29 oz.) can hominy (white)

  13. Cut tripe into bite-size pieces. Trim excess fat. Rinse pieces

  14. 6-quart pot with

  15. 8 cups water. Bring to a

  16. 1 hour and 45 minutes

  17. or until tender. Remove from heat. Combine oil and flour. Brown

  18. flour over low heat. Remove from heat. Add chili powder to flour

  19. and slowly add 1 cup water to form paste. Pour paste mixture into pot containing tender tripe.
