  1. 4 boneless, skinless chicken breast halves

  2. 1 can(s) (14 1/2-ounce)

  3. canned peaches

  4. 1/2 yellow onion , chopped

  5. 1 clove(s)

  6. garlic , minced

  7. 1/2 cup(s) white wine

  8. 3/4 cup(s) chicken stock

  9. 1/4 cup(s) apricot preserves

  10. 1/4 teaspoon(s) nutmeg

  11. 1/2 teaspoon(s) cinnamon

  12. Salt , to taste

  13. 2 tablespoon(s) corn oil

  1. Heat one tablespoon corn oil in medium saute pan over medium-high heat. Add chicken breasts and cook until evenly browned on both sides. Remove from pan.

  2. Add one more tablespoon of corn oil to the same pan and saute chopped onions over medium heat until soft and translucent. When soft add minced garlic and saute for one minute more.

  3. Add white wine, and reduce liquid by half. Add chicken stock, spices, peaches and apricot preserves. Let simmer until liquid is reduced by half. Add chicken back to pan, cover and let simmer over low heat for 15 minutes. Serve with steamed white rice and a simple green salad.
