  1. 2 egg whites

  2. 1/8 tsp cream of tartar

  3. 3/4 c confectioners sugar

  4. 1/4 c coconut

  5. 1/4 tsp almond extract

  1. At High Speed beat egg whites until stiff and form peaks. gradually add (sprinkle) conf sugar in until completely dissolved. Peaks should look glossy. Fold in coconut and extract with a rubber spatula. drop tsp on large cookie sheet 1' apart. Bake 1 hr. for a festive look at the holidays I add I tiny bit of red or green to the batter.
