  1. PEANUT AND BANANA-STUFFED CHICKEN

  2. 1 onion

  3. 1 clove garlic

  4. 1 Tbs butter

  5. 1 tsp turmeric

  6. 1 tsp paprika

  7. 1 tsp ground coriander

  8. 1 cup cooked rice

  9. 1/2 cup roasted blanched peanuts

  10. 2 ripe bananas

  11. 1 large chicken

  12. 1/4 cup water

  13. Peel onion and chop finely. Crush garlic and chop small. Heat

  14. butter in a frying pan. Add onion and garlic and cook 2 minutes,

  15. stirring all the time. (Don't burn the garlic!) Add turmeric,

  16. paprika and coriander. Add cooked rice and roughly chopped peanuts.

  17. Mash bananas and add to rice mixture. Combine well. Stuff the

  18. chicken with this mixture. Place chicken and water in a roasting

  19. 180 C for 1 - 1 1/2 hours or until juices run clear.

  20. Serve cut into portions and serve with rice stuffing.
