  2. ACKEE SOUP

  6. 1 cn Ackees (19oz) -- about 4 cups

  7. 1 1/2 c Stock, chicken

  8. 1/2 c Tomatoes -- peeled, chopped

  9. 1/4 c Shallots -- chopped

  10. Salt -- to taste

  11. Pepper, black -- to taste

  12. Tabasco hot sauce -- to taste

  13. 1/2 c Heavy cream

  14. Put the ackees together with the liquid from the can

  15. into a saucepan with the chicken stock, tomatoes,

  16. shallots, salt and pepper to taste; cover and simmer

  17. gently until the shallots are tender. Puree in an

  18. electric blender. Return to saucepan, season to taste

  19. with hot pepper sauce, stir in cream and heat through.

  20. Also very good chilled,

  21. Garnish, if desired, with chopped chives or chopped
