  6. 2 c Sugar

  7. 1 c Buttermilk

  8. 1 ts Baking soda

  9. 1/4 ts Cinnamon; or more

  10. 1 c Pecans; chopped

  11. 1 ts Mexican vanilla

  12. Use large heavy pan with handle. Bring sugar, buttermilk, soda,

  13. cinnamon to a boil over medium to medium-high heat. Stir constantly with a

  14. wooden spoon. Boil to soft ball stage or 234

  15. on candy thermometer. Remove

  16. from heat. Add pecans, vanilla, and stir wildly until candy looses its

  17. 10 minutes. Drop on waxed paper. Makes about 18 candies. Once

  18. it loses its sheen, you must work fast or it will set up.
