  9. 1 pound beef top round -- boneless, cut in

  10. 1-inch cubes 1 1/4 teaspoons cumin seeds

  11. 1 1/4 teaspoons oregano

  12. 1/3 teaspoon dried sage

  13. 1 small bay leaf

  14. 1 scallion -- finely chopped

  15. 1/3 teaspoon cayenne pepper

  16. 2/3 teaspoon paprika

  17. 1 garlic clove -- minced

  18. 1 1/2 tablespoons red wine vinegar

  19. 1/3 teaspoon black pepper

  20. 1 tablespoon dried parsley -- finely chopped

  21. 1 tablespoon cilantro

  22. 1 tablespoon olive oil

  23. 1 onion -- finely chopped

  24. 1 green bell pepper -- coarsely chopped

  25. 1 red bell pepper -- coarsely chopped

  26. 1 1/2 tablespoons jalapeno pepper -- finely chopped

  27. 2 cups canned tomatoes -- with juice, chopped

  28. 4 cups bean cooking liquid

  29. Sort and rinse black beans. Place in heavy pot, cover with cold water (at leas
