  2. 1 eggs

  3. 2 medium bananas -- mashed ripe

  4. 1/3 cup butter -- melted

  5. 1/4 cup pineapple fruit spread

  6. 1 teaspoon vanilla extract

  7. 4 cups flour

  8. 3 cups coconut -- flaked unsweetened

  9. 1/2 teaspoon baking powder

  10. 1/2 teaspoon salt

  11. 2 ounces macadamia nuts -- chopped

  1. Preheat oven to 375. Combine egg, banana, butter, fruit spread, and vanilla in medium bowl. Add flour, coconut, baking powder, and salt; mix well. Stir in nuts. Drop tablespoonsful of dough 2" apart onto lightly greased cookie sheets. Bake 10-12 minutes, until lightly browned.

  2. Cool on wire racks. Store in tightly covered container.
