  5. 2 7/8 ounces margarine

  6. 1 3/8 pounds onion -- cut in strips

  7. 7 1/8 ounces flour, white

  8. 10 1/2 cups beef bouillon

  9. 7/8 cup red wine

  10. 1 salt, pepper -- to taste

  11. 3 1/3 ounces sprinz (or other swiss cheese) -- shredded

  12. STEP ONE:

  13. - cut onion in fine strips

  14. - roast flour in a pan in the oven by great heat until dark brown

  15. - cold dwon flour

  16. STEP TWO:

  17. - roast onion and margarine

  18. - stir in flour, mix well

  19. - cold down a little bit

  20. - stir in consomme (or bouillon) , stir well

  21. - add red wine, boil for one hour

  22. - carefully puree the soup in a blender at low speed until very smooth

  23. - return to the pot and adjust the salt and pepper

  24. - serve with shredded Sprinz
