  1. 2 pounds boneless pork loin, cut into 3/4 inch cubes 3/4 cup cider vinegar

  2. 3/4 cup olive oil

  3. 1/4 cup lemon juice

  4. 1 tablespoon Worcestershire sauce

  5. 1 tablespoon chopped fresh oregano or 1 teaspoon dried 1 tablespoon chopped fresh thyme or 1 teaspoon dried 2 garlic cloves, minced

  6. 2 teaspoons ground black pepper

  7. 1 teaspoon salt

  8. 1/2 teaspoon cayenne pepper

  1. Place all ingredients in a 1-gallon self-sealing plastic bag, mix well. Seal bag and marinate in the refrigerator 8 to 12 hours or overnight.

  2. Preheat oven to 350 degrees F. Remove pork cubes from marinade, discarding marinade. Pat pork dry with paper towels; place cubes in a single layer, not touching, in a shallow baking pan. Bake about 25 to 30 minutes, until pork is just tender and lightly browned. Remove to serving platter or chafing dish and serve hot.
