  8. 1 Pt Sweet Milk

  9. 1 C Cornmeal -- sifted

  10. 1 1/2 Tbsp Sugar

  11. 1/2 Tsp Salt

  12. 1 Tbsp Butter (Do Not Substitute Margarine) -- heaping

  13. tbs. 3 Eggs -- separated

  14. Scald the milk and slowly add the cornmeal, sugar and salt. Cook untill

  15. it "puffs," stirring constantly. Set off the stove and add the butter.

  16. Allow to cool for 3 minutes. Stir in well-beaten egg yolks. Fold in the

  17. stiffly beaten egg whites. Bake in a dish heavily greased with cooking

  18. 50 minutes at

  19. The bread will "fall" when removed from the oven, so eat immediately

  20. with plenty of butter.

  22. Dr. Margaret B. Ballard was in private medical practice in Baltimore,

  23. MD, for nearly forty years and taught obstetrics and gynecology at the

  24. University of Maryland School of Medicine. Now retired from medical

  25. practice, Dr. Ballard has returned to her native Monroe County, WV,

  26. where she in engaged in genealogical and historical research. In

  27. addition to her research activities, Dr. Ballard markets in considerable

  28. quantity her home-made soap which she makes in a cast iron kettle.
