  1. 2 cups dry biscuit mix

  2. 2 tbsp. brown sugar

  3. 2 tsp. ground cinnamon

  4. 1 1/2 cups evaporated milk

  5. 1 tsp. ground allspice

  6. 1/2 cup canned pumpkin puree

  7. 2 tbsp. vegetable oil

  8. 2 large eggs

  9. 1 tsp. vanilla extract

  1. Combine biscuit mix, sugar, cinnamon and allspice in a large bowl. Add milk, pumpkin, oil, eggs and vanilla. Beat until smooth. Pour 1/4 to 1/2 cup batter onto a preheated lightly greased griddle. Cook until top of pancake is bubbly and edges are dry. Flip and cook until golden. Serve immediately with syrup or honey.
