  2. 10 egg yolks

  3. 1 quart heavy whipping cream

  4. 1 cup sugar

  5. 1 1/2 tablespoons vanilla

  6. brown sugar

  1. Heat cream over moderate heat and add sugar. Stir constantly until sugar is dissolved and add vanilla.

  2. In a separate bowl whip the egg yolks. Add the cream/sugar mixture to the yolks and pour into individual ramekins.

  3. Place the ramekins in a hot water bath in a large baking dish. Bake in a 300 oven for 30 minutes. Cool for 2 hours and top with brown sugar.

  4. When ready to serve, place the ramekins under the broiler for two minutes to caramelize the sugar.
