  1. 2 Eggs - separated

  2. 2/3 cup 131g / 4.6oz Sugar

  3. 3 oz 85g Sweet butter

  4. 2 tablespoons 30ml Toasted almond oil

  5. 1 cup 62g / 2 1/5oz Sifted all-purpose flour

  6. 1 teaspoon 5ml Baking powder

  7. 1/2 cup 46g / 1.6oz Ground toasted almonds

  1. Recipe Instructions Soften butter; do not let it melt. Combine with toasted oil. Butter and flour Madeleine molds. Combine yolks and sugar, then stir in butter mixture. Mix baking powder and flour together and stir into mixture. Beat egg whites stiff and fold in. Add ground almonds. Place a decent spoonful of dough in each mold, approximately half full. Bake at 400F for 10-15 minutes until golden.
