  1. 3 3/4 lbs 1702g / 60oz Beef short ribs - cut 1/2" slices

  2. With bones

  3. Salt - to taste

  4. Freshly-ground black pepper - to taste

  5. 1/2 cup 118ml Water

  6. 2 tablespoons 30ml Fresh lemon juice

  7. 1 teaspoon 5ml Dried red pepper flakes

  8. Marinade

  9. 1/4 cup 59ml Hoisin sauce

  10. 3 tablespoons 45ml Plum sauce

  11. 2 tablespoons 30ml Oyster sauce

  12. 2 tablespoons 30ml Soy sauce

  13. 1 tablespoon 15ml Peanut oil

  14. 1 tablespoon 15ml Sesame oil

  15. 1 tablespoon 15ml Honey

  16. 1 tablespoon 15ml Chili paste

  17. 1 tablespoon 15ml Pureed garlic

  18. 1 tablespoon 15ml Freshly-grated ginger

  19. 1 Cilantro - stems trimmed

  20. And roughly chopped

  21. 1 Scallions - finely chopped

  1. Preheat oven to 350 degrees.

  2. Season ribs with salt and pepper. Lay across a rack in a roasting pan or baking sheet and bake 10 minutes. In a small bowl, combine water, lemon juice, and red pepper flakes. Brush over top side of ribs and bake an additional 10 minutes. Turn, brush again, and bake 10 minutes more. Set aside to cool.

  3. Combine marinade ingredients in a large bowl. Add roasted ribs and toss to coat. Cover with plastic wrap and refrigerate a minimum of 4 hours or as long as 24.

  4. Preheat grill or broiler. Grill ribs for 2 minutes per side and serve immediately.

  5. This recipe yields 6 servings.
