  1. 2 ts Olive oil,

  2. 1/4 c White Grape Juice)

  3. 1 md Onion, chopped

  4. 1 md Green pepper, chopped

  5. 2 1/2 c Sliced mushrooms

  6. 2 Cloves garlic, minced

  7. 2 lb Medium-firm tofu

  8. 2 tb Nutritional yeast, optional

  9. 1 ts Salt, optional

  10. Sliced tomatoes for garnish

  1. Heat oil or white grape juice in a medium-sized skillet.

  2. Saute vegetables and garlic until limp.

  3. In a large bowl, crumble or mash tofu.

  4. Add sauteed vegetables, and yeast and salt if desired.

  5. Preheat oven to 350 degrees (325 if using glass pan).

  6. Spread tofu mixture evenly into a 9 or 10-inch quiche pan.

  7. Bake 30 to 40 minutes, until the edges of the tofu start to brown.

  8. Garnish with tomatoes.

  9. Serves 6-8.

  10. Variation: If you prefer quiche with a crust, use your favorite single pie crust recipe.
