  1. Spring Onion Salad (Salade D'oignons De Mai)

  2. Serves 8 2 pounds small spring onions

  3. pinch of salt

  4. Black pepper, to taste

  5. 1 tablespoons sugar, preferably super fine

  6. 1/4 cup olive oil

  7. 2 tablespoons white wine vinegar

  8. Peel onions and chop finely. Place onions in sieve and pour boiling

  9. water over them, then run some cold water over onions and drain.

  10. Place in a bowl, sprinkle with salt, pepper and sugar. Add oil and vinegar and mix. Serve at room temperature.
