  1. 125g/4oz Vegeburger soy mix

  2. 1 small egg, beaten

  3. 1/2 cup/

  4. 110ml/4fl oz water

  5. 4 Tbsp extra-virgin olive oil

  6. 4 slices of eggplant (aubergine)

  7. 1 green pepper, deseeded and quartered

  8. 1 medium tomato, quartered

  9. 4 slicks fresh tarragon

  10. For the Pesto Sauce:

  11. 30g/1 oz fresh basil leaves

  12. 1 clove garlic

  13. 1 Tbsp pinenuts

  14. 3 Tbsp extra olive oil

  15. 1/4 tsp salt

  16. black pepper

  17. Serves 4

  1. Method :

  2. Put the burger mix, egg and water into a bowl. Leave to stand for 15 minutes or according to the instructions on the burger mix pack. Form into 4 burger shapes.

  3. Brush both sides of the burgers, eggplant, pepper and tomatoes with olive oil and fry in a griddle pan until lightly brown.

  4. Alternatively, you could use a frying pan, heating the oil in the pan first.

  5. Put the ingredients for the pesto sauce in a food processor, and blend to a puree.

  6. Pileup the tomato, bell pepper, burger, and eggplant on a serving plate. Secure them with a stalk of tarragon, drizzle with the pesto sauce, and serve.
