  1. 6 hard boiled egg s, finely chopped

  2. 1/2 cup mayonnaise

  3. 1 small onion , chopped finely

  4. 2/3 cup sour cream

  5. 1 package of Philadelphia Cream Cheese

  6. 2 small jars of black caviar

  7. lemon

  8. parsley

  9. Bremer Wafers

  1. Prepare sides to support the dip, by tearing a long piece of aluminum foil and folding the entire length several times until it is 4 inches tall and 16+ inches long. Shape it into a circle or other shape on the dish the caviar mold will be served on. Join it at the edges, with the short side standing up like the sides of a springform pan.

  2. Mix the hard boiled eggs with enough mayonnaise so that the mixture holds together. Spread it inside the walls of the aluminum foil.

  3. Layer the onion on top. Mix the sour cream and softened cream cheese and spread on top of onions. Chill until ready to serve.

  4. Drain the caviar in a fine mesh sieve for 15 minutes before serving. Remove base from refrigerator and spread caviar on the top just before serving.

  5. Remove and discard sides. Arrange Bremer Wafers around the mold. Garnish by slicing a lemon thinly and cutting through half of the resulting disk. Pull the bottoms of the lemon in opposite directions, making an “s” shape. Place a sprig of parsley in the curve of each side of the “s”.
