  1. Preheat oven to 425. Make a paste out of the herbs and garlic in a food processor. Rub on the outside of the meat and allow to sit while oven heats. Roast for 15 minutes, and then reduce to 350 and continue roasting. Usually about 10 minutes a pound for rare or 135-140 degrees (145-150 for medium rare). Allow the meat to rest at least 10 minutes before carving.
