  1. 4 Chicken breast fillets

  2. 4 oz 113g Dried breadcrumbs

  3. 2 tablespoons 30ml Sesame seeds

  4. 1 tablespoon 15ml Chopped fresh mint

  5. 1 teaspoon 5ml Paprika

  6. Salt and pepper

  7. 1 Egg - beaten

  8. 4 tablespoons 60ml Vegetable oil

  1. Cut chicken breasts into 2 inch cubes. In a large bowl, mix together breadcrumbs, sesame seeds, mint, paprika, salt and pepper until thoroughly combined.

  2. Coat chicken nuggets, first in beaten egg, then in breadcrumb mixture. Put on baking sheet and chill for 30 minutes Heat oil in frying pan and fry nuggets for 10 minutes turning occasionally until golden and crispy.

  3. Remove from pan and drain before serving.
