  2. 1/2 C dried red kidney beans

  3. 2 C water

  4. 1/2 C chopped onion

  5. 1/4 C chopped green bell pepper

  6. 1/4 C chopped green onion

  7. 1 bay leaf

  8. 1/4 tsp thyme

  9. 1 clove garlic -- minced

  10. 1/8 tsp freshly ground black pepper

  11. 3 oz turkey ham -- in

  12. 1/2" cubes

  13. 1 C hot cooked white rice no salt or -- fat

  14. added

  1. Put all the ingredients except the rice in a saucepan and simmer coveredfor 1/2 hours, or untilthe beans are tender and the sauce is thick. To serve: Spoon 1/2 C of riceonto each plate andladle the Red Beans and Turkey Ham over or around the rice. You may wantto add the turkeyham during the last 30 minutes of cooking so it doesn't become so tenderthat it falls apart. If youwant fairly firm beans but a thick gravy at the same time, mash 1/2 C ofthe cooked beans andstir them back into the pot. This will thicken the remaining liquid. Theturkey ham is not anecessary ingredient. The beans themselves are very tasty and with theother seasonings can holdtheir own. Serve chopped onion, white or green, as a garnish to sprinkle onthe beans. Hot Sauceand pickled hot peppers are also customary accompaniment
