  1. Ingredients :Serves 4

  2. 4 cloves

  3. 1 1/2 tablespoons 1 tablespoons 1 teaspoon 1 tablespoon 1 teaspoon 3 2 tablespoons 500 g 2 teaspoons Handful

  4. Garlic, finely minced

  5. Light soy sauce

  6. Vietnamese fish sauce

  7. Sesame oil

  8. Palm or golden granulated sugar

  9. Pepper

  10. Small red chilies, finely chopped

  11. Groundnut oil

  12. Fillet of beef, thinly sliced

  13. Sesame seeds, toasted

  14. Chinese chives, for garnishing

  1. Mix the garlic, soy sauce, fish sauce,sesame oil, sugar, pepper and chilies in a bowl with 1 tablespoon of thegroundnut oil.

  2. Add the beef slices, mix thoroughly andleave to marinate, covered, in the refrigerator overnight.

  3. Heat the remaining oil in a wok or fryingpan, and when it is very hot, add the beef slices in one layer.

  4. Cook quickly, about 1 1/2 minutes on eachside for medium-done beef, and remove to a warmed plate. Cover and keepwarm while you cook the remaining slices, if you could not fit them allin at once.

  5. Sprinkle with the sesame seeds, garnishwith chives.

  6. This dish can be served along with rice,spinach and watercress stir-fry, if desired.
