  2. Title: Jamaican Jerk Chicken with Papaya Salsa

  5. MMMMM--CHICKEN--

  6. 4 ea Leg, chicken, quarters

  7. -- broiler/fryer type

  8. 2 tb Hot pepper sauce

  9. 1 ts Salt, seasoned, spicy

  10. 1/2 ts Cinnamon

  11. 1/2 ts Allspice

  12. MMMMM--PAPAYA SALSA--

  13. 1 1/2 c Papaya, diced

  14. 1/4 c Onion, red, minced

  15. 2 tb Sugar

  16. 2 tb Pepper, red, minced

  17. 2 tb Jelly, hot pepper

  18. 2 tb Cilantro, chopped

  19. Rice, cooked

  20. Papaya Salsa:

  21. : In a large bowl, mix all of the ingredients together well.

  22. Chill. Makes about 2 cups.

  23. Chicken:

  24. : In a shallow container, place the hot pepper sauce. Add

  25. chicken, one piece at a time, turning to coat. Sprinkle salt,

  26. cinnamon and allspice over the chicken.

  27. : Place the chicken, skin side up, in a single layer in a large

  28. shallow baking dish. Bake at 400 F, basting twice with pan juices,

  29. for 45 minutes or until the chicken is fork tender.

  30. : Arrange the rice and chicken on a serving platter. Spoon

  31. papaya salsa over the chicken.
