  1. 2 tablespoons plus 2 teaspoons dried pasteurized egg whites, prepared according to the package directions (or 4 fresh whites)

  2. 6 cups sifted confectioners' sugar

  3. 1/2 teaspoon cream of tartar

  1. Combine all of the ingredients in a large bowl. Beat the mixture on high speed until it's light and fluffy, about 5 to 6 minutes.
