  1. 4 cups arugula -- coarsely chopped

  2. 8 plum tomatoes -- cored and diced

  3. 4 teaspoons lemon juice, fresh

  4. 2 teaspoons olive oil

  5. 1 teaspoon kosher salt

  6. freshly ground black pepper -- to taste

  7. Toss the arugula, tomatoes, lemon juice and olive oil together. Season with salt and pepper.
