  1. 2 c Tightly packed spinach,

  2. Washed and stemmed

  3. 2 tb Broken pine nuts or Shelled walnuts

  4. 2 lg Cloves of garlic, peeled

  5. Salt

  6. 1/2c Olive oil

  7. 1/2c Freshly grated

  8. Parmesan cheese

  9. 2 tb Freshly grated Romano cheese

  1. + Place spinach, pine nuts, garlic, and 1/4 to 1/2 tsp.

  2. of salt, if desired, in a food processor fitted with the steel blade or a blender jar.

  3. Pulse several times to begin chopping and blending the ingredients.

  4. Then turn on machine at high speed and pour in the olive oil in a steady stream.

  5. Blend until the mixture is a smooth paste.

  6. If you are using a blender you will have to stop and start the machine occasionally to give the ingredients a stir.

  7. When the ingredients are pureed, transfer to a bowl and stir in the cheeses.

  8. Blend thoroughly.

  9. For parsley pesto, substitute 2 c.

  10. of parsley for the spinach.
