  8. 1/2 cup Spinach; raw, fresh -- minced

  9. 4 Lasagna noodles -- cooked

  10. 2 Scallions -- finely minced

  11. 1/2 cup Part-skim ricotta

  12. 1/2 cup Tomato sauce

  13. 1/2 cup Broccoli -- finely chopped &

  14. 4 teaspoon Part-skim mozzarella

  15. blanched

  16. Preheat oven to 375. Pat the noodles dry, then lay them out on the counter. In a medium bowl fold together the riccota, broccoli, spinach and scallions.

  17. Divide this mixture evenly between the noodles, spreading it out with the back

  18. of a spoon. Roll up the noodles as you would a jelly roll, then set them in a

  19. baking dish that's been sprayed with nonstick vegetable spray. Pour on the

  20. tomato sauce, sprinkle on the cheese, and bake until cooked through and the

  21. cheese has melted, about 20 minutes. Serve warm. - - - - - - - - - - - - - - - - - -
