  1. Make Classic Cheesecake with following changes:

Crust : Substitute gingersnap cookie crumbs for graham cracker crumbs Filling : Substitute light brown sugar for granulated sugar and 1/2 teaspoon almond extract for vanilla bean seeds and vanilla extract. Stir in 1 cup canned pumpkin puree and 1 1/2 tsp pumpkin-pie spice. Omit the topping. Bake, refrigerate, and unmold the cheesecake. Garnish with ground cinnamon, whipped cream or nutmeg and toasted pecan halves, if desired.
