  1. 4 slices bacon

  2. 1 (10 ounce) package frozen peas, thawed and drained. I used the ones with the little onions in it.

  3. 1 cup shredded Cheddar

  4. 2 hard-cooked eggs, peeled and chopped. I used three.

  5. 3 tablespoons mayonaise. I used fat free and added some extra.

  6. 2 teaspoons lemon juice Salt and pepper to taste In a medium bowl, combine the bacon, peas, cheese, and eggs. Stir in mayonaise, lemon juice, salt and pepper, to taste. Serve immediately or refrigerate until ready to serve

  1. In a large skillet, cook the bacon over medium heat until crisp. Transfer to a paper towel lined plate to drain. Let cool. (I cut it in pieces with my kitchen scissors). In a medium bowl, combine the bacon, peas, cheese, and eggs. Stir in mayonaise, lemon juice, salt and pepper, to taste. Serve immediately or refrigerate until ready to serve.
