  1. 1 tbsp. vegetable oil

  2. 1 1/2 cups chopped onion

  3. 1 1/2 cups peeled and thinly sliced carrot

  4. 1 cup thinly sliced celery

  5. 1 cup diced red bell pepper

  6. 1 1/2 cups peeled, diced potato

  7. 2 tbsp. all purpose flour

  8. 1 cup vegetable broth

  9. 3/4 cup water

  10. 3/4 tsp. ground cumin

  11. pinch cayenne pepper

  12. 1/4 tsp. salt

  13. 1/4 tsp. pepper

  14. 3/4 cup grated Cheddar cheese

  15. 2 tsp. minced cilantro leaves

  1. Heat oil in a large saucepan. Add onion, carrot, celery, bell pepper and potato. Cook over medium heat, stirring frequently, until onion is tender. Add flour and cook, stirring, 3 minutes. Stir in vegetable broth, water, cumin, salt and pepper. Simmer 10 minutes, stirring occasionally. Remove pan from heat and add Cheddar and cilantro. Stir until Cheddar is melted and incorporated.
